From 16 to 19 June 2025, the acclaimed chef (you know the one, Biota Dining, hats, sustainability, looks slightly like he forages for breakfast and then builds a fire using intuition and sea salt) is hosting his “Wild Tastes of the Top End” culinary safari, and it’s honestly the kind of foodie fever dream that would make even a city slicker weep gently into their turmeric latte.

Set in the gloriously remote Bamurru Plains which is basically luxury safari meets David Attenborough documentary, this four-day culinary love letter to the Northern Territory is all about embracing the wild.
